Enjoy a guilt free chocolate cookie with added protein. These are great as a snack throughout the day to keep your protein levels up ready to take on that workout and they average at 6-7g protein per cookie.
Ingredients (makes 12-14 cookies)
150g coconut oil 50g runny honey 1 ripe banana 2 large eggs 3 scoops chocolate whey protein (25g-30g scoops) 125g self raising flour 1 tsp baking powder 50g dark chocolate chips pinch of salt
Method
pre heat the oven to 180oC fan/ gas mark 4
Place coconut oil in a microwave container and microwave for 90 seconds until the coconut oil has completely melted. CAUTION HOT OIL
In a separate bowl mash the banana with the honey and eggs, then fold in to the coconut oil.
Add the whey protein and baking powder to the wet ingredients and mix together until all the protein has dissolved and there are no lumps
Finally sift the flour into the batter and add the salt and chocolate chips. Stir the mixture until all combined, then place in the fridge for 10 mins
this will allow the mixture to thicken slightly
when ready to bake remove mixture from the fridge and spoon a heaped tbsp of the mix on to a baking tray, making sure not to let each one touch.
bake in the middle of the oven for 10-15 minutes or until golden
