Always been a fan of having “eggy bread” or “French toast” when i was younger. This adult version of my beloved childhood classic favourite will keep you going all morning. This is super easy and super quick to make.
2 large eggs
1 banana sliced
2 slices bread
2 tbsp toasted sunflower seeds
1 heaped tbsp coconut peanut butter (or almond butter)
2 x 1/2 tsp cinnamon
1 tsp coconut oil
add the sunflower seeds to a dry no stick frying pan and toast the sunflower seeds shaking to avoid them burning. Once toasted and turned golden remove from pan and place to one side.
whisk the eggs together with 1/2 tsp cinnamon and pour on to a plate making sure it does spill over the edges
soak the bread on either side in the egg mixture and fry in a large frying pan for a couple of minute on either side or until golden
add the coconut oil in to a separate pan followed by the banana and 1/2 tsp cinnamon.
fry the banana in the coconut oil until they start to turn brown and go soft then turn the heat off.
add the coconut peanut butter into a microwave dish and heat for 30 seconds until it has melted and gone runny
now its time to assemble
place the french toast on to a plate, spread over the coconut peanut butter, place the banana on top and then sprinkle the sunflower seeds over the top to finish and enjoy.
