This dish is perfect for those on the go and want a quick and nutritious meal. With just a few simple ingredients you can make this one pan wonder a hearty meal that even the kids would enjoy.
Ingredients
400g lean turkey mince
1 large onion diced
1 large red pepper
1 ripe avocado sliced
1 packet microwave basmati rice
2 tomatoes sliced
2 handfuls frozen peas and corn mix
big handful fresh spinach leaves
2 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp garlic puree
1 tsp chilli flakes
dash worcestershire sauce
1 tbsp tomato puree
Method
In a large no stick pan add 1 tbsp coconut oil on a medium heat along with the onion and pepper until softened
Add the paprika, garlic, cayenne, chilli flakes, tomatoe puree and worcestershire sauce and stir
Next add the turkey mince and frozen veggies and cook through
Once the mince is cooked through add the rice to the pan along with the spinach and fry mix together until the rice starts to catch on the pan
Turn off the heat and rest to one side before placing the avocado and tomato on top
serve in the pan at the table or dish up accordingly
