- 1 courgette, grated
- 1 potato, grated
- 2 spring onions, finely chopped
- 1 red chilli, finely chopped
- 1/2 tsp ginger puree
- 1 tsp garlic puree
- 2 tbsp of soya sauce
- 3-4 tbsp plain flour to help bind
Grate the courgette and potato in to a large bowl, sprinkle some salt over the top and mix. leave this to one side for a couple of minutes to allow the moisture to be drawn out of the veg.
grab yourself a clean tea towel or muslin cloth and strain the grated veggies through the cloth removing all the excess water and transfer back in to the large bowl
finely chop the spring onions and red chilli ( add more chilli if you prefer more heat) and add to the veg
next add the garlic, ginger, soya sauce and pinch of pepper and mix thoroughly
add 3-4 tbsp plain flour to the burger mix to help bind the ingredients together
shape using your hands to form burger patties and set a side on to a trayplace the tray in the fridge for 30 minutes to allow them to firm up
after 30 minutes take them out of the fridge and fry them in coconut oil on a medium heat for 3 minutes either side.
