Cottage Cheese Pancakes

  • non stick frying pan

Ingredients
  

  • 3 large egg whites
  • 150 grams cottage cheese
  • 60 grams plain flour
  • 1/4 tsp baking powder
  • pinch salt
  • 1/2 tsp mixed herbs
  • pinch chilli flakes

Instructions
 

  • Whisk the eggs together with the baking powder until smooth in a mixing bowl
  • Add the cottage cheese in to the mixing bowl and mix together until light and creamy.
  • Sift the flour into the pancake mix and stir until a light batter forms, then add the salt, mixed herbs and chilli flakes
  • Heat your frying pan with a little coconut oil and spoon on 2 tbsp of the mix. Fry for a couple of minutes on either side on a medium heat
  • Enjoy with your favourite toppings
  • This recipe goes well with a couple of streaky bacon rashers and spring onions (note macros and calories per serving doesnt include the added toppings)
