Whisk the eggs together with the baking powder until smooth in a mixing bowl
Add the cottage cheese in to the mixing bowl and mix together until light and creamy.
Sift the flour into the pancake mix and stir until a light batter forms, then add the salt, mixed herbs and chilli flakes
Heat your frying pan with a little coconut oil and spoon on 2 tbsp of the mix. Fry for a couple of minutes on either side on a medium heat
Enjoy with your favourite toppings
This recipe goes well with a couple of streaky bacon rashers and spring onions (note macros and calories per serving doesnt include the added toppings)
