Pre heat oven to 180 degrees C/ gas mark 4
Combine the flour, coconut flour, baking powder, stevia and whey protein in a mixing bowl and mix well
Next make a well in the middle and pour the egg whites, almond milk and vanilla extract in and whisk for a couple of minutes until the mix is silky smooth ( should be a running texture)
Grab your baking tray, line with baking parchment and pour half the mixture in to the tray and sprinkle 1/2 the cinnamon on top
Next add the rest of the batter followed by the other half of the cinnamon and using a fork/ tooth pick swirl the cinnamon around the batter to create a marble affect
Bake in the oven for 10-12 minutes
Tip: allow the mixture to be slightly under done to keep it moist once removed from the oven
These can be done with any whey protein of your choosing
