Simple Oat and Banana Muffins

Equipment

  • 2 x Mixing bowl
  • muffin tray

Ingredients
  

  • 3 cups Porridge Oats
  • 3 medium Bananas
  • 1.5 cups Almond Milk
  • 2 Eggs
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • pinch Salt
  • Blueberries (optional)

Instructions
 

  • Pre-heat oven to 170 degrees C or gas mark 4
  • Grease a muffin tray with a little oil or alternatively use cupcake holders
  • Mix all the dry ingredients into a bowl and give them a good stir.
  • In a separate mixing bowl mash the bananas until there are no lumps
  • Add the eggs and milk and whisk until all combined
  • Add the wet ingredients into the dry ingredients a bit at a time so to not get big lumps and mix well.
  • Pour an equal amount of the mixture into the 12 muffin holes, then add your topping of choice. For mine I used blueberries, but feel free to add some chocolate chips or other fruit.
  • Bake for 20-25 minutes until golden on top
  • After baking remove from the oven and let them cool slightly before enjoying with your morning coffee
