Pre-heat oven to 170 degrees C or gas mark 4
Grease a muffin tray with a little oil or alternatively use cupcake holders
Mix all the dry ingredients into a bowl and give them a good stir.
In a separate mixing bowl mash the bananas until there are no lumps
Add the eggs and milk and whisk until all combined
Add the wet ingredients into the dry ingredients a bit at a time so to not get big lumps and mix well.
Pour an equal amount of the mixture into the 12 muffin holes, then add your topping of choice. For mine I used blueberries, but feel free to add some chocolate chips or other fruit.
Bake for 20-25 minutes until golden on top
After baking remove from the oven and let them cool slightly before enjoying with your morning coffee
