I’ve always wanted to make a healthy, hearty and delicious hummus without having so much oil added to it. This recipe has all the flavour of a fantastic hummus without all the added fat content. I used courgettes for this recipe but it also always works very well with carrots or parsnips.
- 1x large courgette
- 1x 400g tin chickpeas drained
- 1x red chill
- 1x tbsp. harissa paste (plus more on top to serve)
- 1x whole lemon zest plus half lemon juice
- 1x clove garlic
- 1x tbsp. tahini
- drizzle of olive oil on top when serving
Combine all the ingredients in a food processor and blitz to desired consistency.
Served best with toasted pittas or raw veggies.
