Make your own fluffy crumpets for your next weekend treat. These golden brown treats are super simple to make and well worth the effort.
They are crispy chewy and delicately spongy in texture with a depth of yeast flavour and are perfect with a knob of butter on top.
Ingredients (makes 10-12)
- 200ml oat milk
- 1 tbsp dried yeast
- 1 tsp sugar
- 250g strong white bread flour
- 1 tsp baking powder
- 1 tsp salt
- oil/butter for greasing
Method
Place the milk into a microwave container and microwave for 40 seconds or until the milk is warm to the touch but not too hot.
Stir in the yeast, sugar and 50 ml warm water and mix together, making sure the sugar and yeast has dissolved, then cover with cling film and set it aside in a warm place for 15 minutes to allow the yeast to activate.
After 15 minutes sift the flour, baking powder and salt together, then make a well in the middle and then in pour the milk mixture
Gently whisk the mixture from the middle outwards making sure the flour is mixing well with the wet ingredients. It should resemble a double cream consistency, if it is too thick add a little bit of warm water
Once whisked together and there are no lumps cover with a damp towel and leave in a warm place for 35-40 minutes
Grab yourself a couple of crumpet rings/ muffin rings, grease the inside and place in the frying pan on a low heat. Allow the heat to rise slowly then pour 4-5tbsp of the mixture into each of the rings.
Cook each one for 4-5 mins, you will see bubbles popping through and the crumpet rise slightly.
Once the crumpet has nearly gone dry on top slowly remove the rings with a pair of tongs and carefully flip the crumpet over and cook for a further minute until golden.
re-grease ring and repeat until all batter has gone.
These can be enjoyed straight from cooking or toasted the next day.
